A really easy recipe for melted snowman biscuits – a great, fun and simple baking idea kids will love this Christmas time.

Melted snowman biscuits have to be one of the cutest winter bakes you can make. They’re look so fun but are really very simple to make. We’ve just used a simple biscuit recipe and added some icing and marshmallows. You could make it even simpler by using shop bought biscuits as most of the fun of these is in the decoration.

If you’re looking for an easy recipe for a kid’s Christmas party or school fair, these are perfect.

How can kids help make melted snowman biscuits?

We’ve used a really easy biscuit recipe as the base for these melted snowman cookies. They’re so easy for kids to make and gives them the chance to roll and cut out biscuits – a great task for young kids.

Decorating the biscuits is the best part of this recipe. Older kids with a steady hand get help pipe the icing on to the biscuits. And if they can’t manage that, once you’ve drawn the outline of the melted snow on they can fill the icing in the middle. If you’ve got really young kids, put them in charge of the finishing touches – adding the marshmallow and Jelly tots.

How long do melted snowman biscuits keep?

These biscuits will keep for up to about three days in an air tight container. If you want to keep them for longer you can make the biscuits ahead of time, and freeze them for up to 3 months. Wrap the baked biscuits in cling film/ glad wrap and pop them in a freezer bag. Make sure you defrost them fully before you decorate and serve them.

What can I use instead of cornflour?

In the UK cornflour is a fine white flour made from ground maize. It’s often used for thickening sauces, and makes these biscuits lovely and soft. In the USA, the equivalent of cornflour is cornstarch.

Ingredients

175g (¾ cups) butter
175g (1 ½ cups)plain flour
50g (½ cup) icing / confectioners sugar
50g (½ cup) cornflour

To decorate:
White marshmallows
1 cup Icing / confectioners sugar
Water
chocolate drops/chocolate sprinkles/Jelly Tots
Writing icing (black and orange)

Preheat your oven to 180C/170C fan, and line a baking tray with baking paper.

Mix all the ingredients together

Get your little ones to measure out the flour (175g), corn flour (50g), icing sugar (50g) and butter (175g) and pop it all in a large mixing bowl. If your butter isn’t soft enough it can be hard to mix so we normally pop ours in the microwave for a few seconds before chopping it up and adding it to our bowl.

Get your kids to use their hands to rub everything together until it starts to look like rough bread crumbs.

Keep working the crumbly mixture with your hands until lumps start sticking together. Keep going until it comes together in a ball of biscuit dough.

Make the biscuits

Lightly flour your work surface and roll the dough out until it’s about ¼ inch or just over 1/2 cm thick. To stop the dough sticking to the rolling pin you can either sprinkle some more flour on it or simply put a sheet of baking paper over the top.

Using a round 7/8cm cookie cutter cut out biscuits and place them on a lined baking tray. Use a bigger/smaller one to get more/fewer biscuits. Gather up the left over dough and roll it out again. Keep cutting out biscuits until you’ve used up all the dough.

Bake the biscuits

Pop the baking trays in the oven for around 10 minutes. Keep an eye on them and remove them from the oven before they turn golden brown.

Leave to cool.

Decorate your melted snowman biscuits

Mix the icing sugar together with a tablespoon or so of water in a small bowl. Mix it together so it forms a slightly runny icing – you don’t want it too thin or it will run.

Pop a few tablespoons of the icing into a small freezer bag, seal it and cut a tiny hole in one corner. Alternatively use a or writing icer/syringe. If you want you can add a few more drops to the icing left in your bowl to make it easier to spread on the biscuits.

Pipe a squigly circle of icing on each biscuit and leave a few minutes to harden. Older children might manage this job themselves, otherwise you can do it, and they can help decorate the snowmen.

Using icing writer pens, paint faces on the marshmallows. It’s a little bit easier to do this before you stick them to your biscuits.

Now get your kids to help either pipe or spoon some icing into the middle of the squigly circle on each biscuit and spread it out. The outline you’ve already piped should stop the icing flowing any further (unless it’s too runny).

Get your kids to add the marshmallows and stick them to the top of your icing. Add a few Jelly Tots or smarties for buttons.

  • To make our snowman, pipe the outline of the melted snow around the biscuit, then use a spoon to spread icing into the middle of the outline to fill it in. Add the marshmallow 'melted snowman' and the chocolate drops for the buttons. I added some chocolate sprinkles and a red sprinkle with icing for the snowman's eyes and nose. You could also use small icing writers in red and black.
