What is Turkish Pide?

Pide is a traditional meal that comes from the Black Sea Coast of Turkey and feels like a sort of cousin to the Italian pizza or Middle Eastern flatbreads. A very simple crust is the base, and rather than rolling into a circle, it is formed into an oblong that is often rolled on the sides so it looks a bit like a boat in shape.

Traditional pide has no sauce, but many toppings that you might regularly find on a pizza. Usually there is a hearty meat base with vegetables of your choice and tons of herbs or spices for flavor. You may also find that these are served with a runny egg cooked on top in most places.

My version doesn't have an egg on top, but you can readily add that to yours for added flavor. It's perfect for dipping the edges of the crust into!

What to Get on Turkish Pide

What to Eat with Turkish Pide Bread

A good Turkish pide is perfect just by itself. Traditionally, you have all of the food groups in one meal so you'll easily feel good about serving it all by itself. If you still want something on the side, nothing beats a nice large garden salad or your favorite roasted vegetables.

How to Make Turkish Pide

To prepare the dough, combine the flour, yeast, sugar, salt, and stir.

Add the oil and warm water then combine using your hands to knead the mixture for five minutes.

Place the ball of dough into a large bowl then cover with a damp kitchen towel and set aside for one hour to proof.

In a large skillet, cook the ground beef and lamb over medium-high heat until nicely browned and no longer pink. Stir regularly to break up the meat.

To the meat, add the onion, bell peppers, and tomatoes, and stir.

Season with the salt, pepper, paprika, and cumin, then continue cooking for 4-5 minutes stirring occasionally. You want to cook until most of the moisture has cooked off of the mixture.

Remove from the heat and mix in half of the parsley to the mixture.

While the meat mixture is cooling, preheat your oven to 350ºF and prepare two baking sheets with parchment paper or a silicone liner.

Dust a clean surface lightly with flour, then divide the dough into two equal portions.

Roll each portion out into a thin oval shape then place them onto the baking sheets.

Add the beef mixture to the dough pieces leaving around 1" of the dough empty as a border around all edges.

Fold the border edge over the filling on the sides then pinch the top and bottom ends together to form a point at each end.

Brush the dough with olive oil then bake for 16-18 minutes or until the crust is golden.

Sprinkle the tops with the rest of the parsley before serving.

Chef's Tip

  • 1 teaspoon sugar
  • 1 cup lukewarm water
  • ½ cup olive oil, divided

Pide Filling Recipe

  • ½ lb ground beef
  • ½ lb ground lamb
  • 1 onion, diced
  • 4 cloves garlic, minced
  • ½ green bell pepper, diced
  • ½ red bell pepper, diced
  • 2 medium tomatoes, diced
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoon smoked paprika
  • 2 teaspoon ground cumin
  • ½ bunch parsley, chopped

For Serving

  • Lemon, cut into wedges

Instructions

Notes

For truly authentic pide, crack an egg on top of the filling as soon as it is removed from the oven. The heat of the pie will cook it to an over easy temp and it is ideal for dipping the edges of the crust into.
