If you’re not up for the challenge of making the aforementioned lemon-raspberry layer cake on this list, maybe this recipe will be more your speed: it’s a one-skillet lemon cake studded with fresh raspberries. They practically burst at the seams with their juice as the cake bakes, so for that reason, we definitely recommend that you serve it warm.

It’s a blank canvas for whipped cream and berries, which is our preferred garnish (especially for the Fourth of July) but you can skip the toppings and change it up depending on the time of year and what fruit is in season.
